We created this book by gathering together everyone's favourite baking recipes, removing the excess sugar (in many cases more than 50%) and adjusting the remaining ingredients so that the recipes still work and the finished product tastes delicious. We found that once that overpowering sweetness was removed, the recipes tasted even better than before! We want our book to be more than another baking book - it is a new concept. Thirty years ago we were encouraged to reduce the amount of salt in savoury food and now we believe we need to do the same thing with sugar in sweet food. Reducing consumption of sweet foods like soft drinks is a great starting point; however we think that the best long term solution is to actually reduce the level of sweetness in all of our sweet food (which has been steadily increasing over the years). The most surprising thing we discovered over the two years we were working on our book, was that our family's sensitivity to sweetness increased significantly. Treats we had previously enjoyed now taste sickly-sweet. We have included a section on how to reduce the sugar craving in your household (page 9). People who start baking regularly from our book will notice an increase in their sensitivity to sweetness and a reduction in their desire for very sweet products. Our book explains why sugar, in moderation, is the healthiest option. We have not hidden the sugar in sweet alternatives like honey or dates; these are made up of the same building blocks as sugar, glucose and fructose, and are just sugar in disguise. Most of our recipes use table sugar; it is readily available, derived from a plant (sugar cane) and works best in most baking. We have worked out the number of teaspoons of sugar in a single serving for each recipe. Compare these figures with the nine teaspoons of sugar in a can of coke or a bottle of sports drink and it removes the guilt associated with eating our cakes! We do not use artificial sweeteners as they are very sweet in taste and therefore maintain the craving for very sweet treats. They also do not work well in most baking recipes.
