Anything sold by Clearspring is usually excellent quality. They can be pricey but then it’s all organic so you are paying for what you get which is quality. I used this buckwheat flour to bake with and it’s works well. It’s was fresh, well within date and well packaged. Only one issue for me and that is the flour is very fine. If your recipe calls for fine flour or you prefer finely milled flour then this will suit you perfectly. I prefer a coarser milled flour for the type of baked goods I make at home. I think if you use this buckwheat flour is might be very suitable to use Japanese recipes.
