Great cookbook
I have collected a number of Chinese cookbook of the years, but this is probably the best one I've ever bought. I was able to get rid of a few other Chinese cook books, because this is so exhausted. She does not dumb down ingredients, and she has two whole chapters on techniques. It is beautifully put together. With the internet full of recipes at your fingertips, I rarely buy actual cookbooks anymore. However, I keep technique books; otherwise, I go online. Back in college, in the 70's, this was the book that taught me how to cook! I purchased this copy to replace a deteriorating, much-used, and much loved version. As Hollow as a Bottle.
This a large book said to be the BEST out there by several people who are not Chinese. Yet I found it lacking in many ways in that it has no receipes for such dishes as Egg Foo Young, Pork Fried Rice, Pork Lo Mein, or Moo Goo Gai Pan. There is only scant mention made on two of theses dishes. What a complete waste of my money it was in purchasing it. I've found far better Chineses recipes on the Internet via You Tube.
