I have had a copy of this book for 40 years. It is clearly written. the great joy of it for me is in his ability to give understanding to spicing and process. I am rarely left wondering why? for long when using his recipes. It does not waste time chatting about grandma this or auntie that; it does give an understanding of groups of spicesand herbs and where they fit; how they can be substituted, and ulimately to allow the cook to taste the finished dish in anticipation. All of the recipes that I have used have worked, but the great joy of the book is not as a collection of recipies to follow, but as an in depth introduction to the ingredients an tecniques.
