It is a very good book for the basic (and sometimes complex) modes of Scottish cookery, and YES there area levels of complexity and flavor balance in this field of cuisine. Ena, and without doubt others have produced a wide range of Scottish dishes that will appeal to past or current residents of that sceptered land and all of the various recipes produce accurate representation of how the things should taste. I do not expect the vast numbers who might read this to understand or attempt to reproduce these items, but that is all to the good as we can keep our fine food to oursleves.
