Madhur Jaffrey writes some very helpful and interesting things at the beginning, e.g. if chillies are too hot an ingredient then just leave them out. This was great advice as the dishes are still wonderful without the extreme heat from chilies and similar "hot" ingredients. The recipes are clearly laid out and simple to follow. I would definitely recommend this book to get started on making authentic Indian food.
