Mr B has taken ordinary British food - fish & chips / sausage & mash / roast chicken etc and turned them into culinary masterpieces by exploring each element and sourcing the best produce based on science ( plus taste). He explains why something works or doesn't - crispy batter and the perfect chip. Really good read and has the recipes that follow the research.
