True Encyclopedia of Cuisine & History

Quite fascinating and interesting to pore over the pages about the beginnings of Cajun and Creole cuisine and to learn the recipes and cooking techniques to prepare it from a local chef.
The pictures are wonderful, both of the food and of Louisiana and its history.
Only reason that I didn't give the product a 5 is that this truly is an encyclopedia, as its title states, and the book is large and heavy: 10 pounds and 12.25 x 10.5 x 2 inches.
However, I'm learning a great deal and already am a better cook because of this book.
