Coconut icecream 1st attempt and 2nd attempt
2 of 2 found this helpful As I don't have dairy I used coconut milk instead and my first attempt I used 2 tins of coconut milk. I'm not sure if my freezer needed to be higher to freeze the inner container as summer atm or icecream maker couldn't deal with amount but after an hour of churning the machines safety feature came into play. A runny cold cream was left but not icecream.
So I turned up my freezer and my 2nd attempt i only used 1 tin of coconut milk and withings 15 ot so minutes we had gorgeous maple and pecan icecream. Not sure if after 1st tin mix has turned into icecream that I could add 2nd mix so we have bigger portions of it. I will try next time.
Coconut milk, maple and pecan recipe: 1 tin of full fat coconut milk (put in fridge overnight), 1/4 maple syrup, 1 1/2 teaspoon vanilla extract, 1/2 cup chopped pecans. Enjoy
