Cool bang of the buck lightweight knife.
5 of 5 found this helpful I wish I could attach a photo of my knife. I didn't buy it from this shop but I assure the buyers of its nice quality for the money. It is Shiro 1 steel by Takefu (not to be mistaken as shirogami 1 by hitachi steel) clad in soft stainless steel... So yes, it has a carbon edge that takes a very sharp edge. It will rust if left wet; it is not a defect- but a property of carbon steel. I just want to give justice to the one who rated down this product. I use this knife as a large paring than a mini Gyuto in a fast paced, high volume kitchen. It is a nice sidekick to my 270mm Masamoto gyuto.
