A brillant hefty tome!

Some great insights which seriously modify 'traditional' western/US cooking methods. U.S. foods oriented but still very useful. Lopez-Aly has done a great deal of experimentation to perfect many basic dishes from poached eggs to roast meats. It's a hefty tome almost too big for the worktop.
