Switch not a thermostat
I think a separate room thermostat for a kitchen is un-necessary so a remote switch on the wall is ideal - saves having to bend down to the floor to operate the fan.

Brilliant nose clip
I have used standard plastic nose clips for years - they just slide off my nose and then break across the bridge after a short time.
With the Speedo Professional I have no problem at all and it's not really any more expensive. Be aware, it really pinches your nose but that doesn't bother me.
