Chef'n Freshforce Poultry Shears Kitchen Scissors Chicken Stainless Steel
    05 Feb, 2020
    Well Made, Poorly Designed
The materials and construction of this thing are excellent. Unfortunately, it’s just not a very good design. A sturdy pair of kitchen scissors is far more effective than this contraption. Firstly, the “gear” system is an interesting idea, but it results in the cutting edge of the scissors being quite far from the pivot point, which greatly reduces the leverage of the scissors (negating the entire purpose of the gears). Secondly, the thumb loop on the top handle of the scissors makes it hard to apply enough pressure to cut through bones, because it forces your hand into a position with considerably less leverage (if you look at professional poultry shears, you will see that the upper handle is FLAT, which allows you to bear down with your palm, rather than with your thumb - this enables a far easier and more powerful cutting stroke). Finally, in case you’re wondering, I know what poultry shears are meant to be used for, and I’m not trying to cut through leg/thigh bones with this thing; I’m using it to spatchcock chickens, and I’ve found it difficult and awkward to use, and simply not fit for purpose.
