I see why it's a classic!
Great knife! Very sharp out of the box. I wear a men's large glove, and this knife handle feels a little short and small for my hands.

Essential and Useful Information
Required reading for anyone in a professional cookery career, in my opinion. The great software CD-ROM in this older edition (Windows 98 era) won't work in Windows 10. Despite that, this book is a great value as a used book purchase!
