I've been using this Jamaican Betapac curry powder for quite a long time now and at my first attempt it was awful but i learned that the best way to cook this curry was to burn the curry first in a Dutch pot which is what they use in Jamaica but I just burn the curry in a big pot first and as I changes colour add oil then add chicken pieces until almost cooked through then remove the chicken onto a plate then add chopped onion, chopped garlic, chopped scotch bonnet peppers and chopped spring onion but not the bulbs just the stems until sweated down then add the chicken back into the pan and add hot water until chicken is covered and the add chopped ginger and a few sprigs of tyme and cook on a medium to low heat setting for about 45 - 50 minutes then just taste it...hope this helps
