Ferment crazy yet ... well read on!
This book is from the US and that is clear in the recipes etc but the range and detail is wide and very helpful, with interesting inserts.
It include a section on the moulds which can spoil ferments, with photos.I haven't found as good a guide to this problem in other books and is it highly practical and helpful.
