Plastic!

You get what you pay for. It works well but the removable plates are flimsy and you really need to heed the instructions where it says to leave the plates until cold, or they will warp. You cannot dishwasher them either. I am sure it will work alright for a while. The other thing - you have to have both plates on even when in the open position
