compact and folds away to save space
This device is great for all sorts of fermented foods. It has an adjustable temperature control which makes it very versatile. I recently found a microwave/convection oven that has a similar feature for keeping food warm but was disappointed to find that it was only available in Europe and Asia and that the product distributed in America did not have the "fermented foods" low temperature feature. I am glad to find the Brod and Taylor unit which I saw mentioned in King Arthur flour web site. I made a batch of sourdough starter in this "proofer" and the warm temperature was just right for the starter to grow. I had previously tried to use a crock pot/slow cooker for keeping sour dough warm, but it got too hot. I look forward to exploring many new recipes and my daughter is excited to try it for kim chee and other fermented vegetable foods.
