There are lots of high-end Japanese knives out there, but for me, the Shun knives are the ticket. With a nice mix of stainless steel and carbon, the knives hold their edge good and don't rust. Another nice thing I like about Shun is the balance... they are balanced nicely. Also, they can be used with either the right or left hand (which is something a lot of knives can't say). Great knife. Sharp as it can get right out of the box. As I sit here typing with one hand, I can verify that. The other hand is wrapped in a towel.
